1 of my favored light sides consists of a vegetable combine with couscous.  I desire it chilled and with some fresh cucumber and herbs.  Sometimes I include tomatoes (seeded) as properly.
1 English cucumber, diced
2 medium carrots, peeled and diced
one cup couscous, cooked
salt and pepper to taste
splash of olive oil
Mix all ingredients with each other and chill.  Serve as a side or as a vegetarian salad.
