Reuben is my all time preferred sandwich and I am a minor obsessed with creating as numerous other dishes with Reuben flavors and I probably can. I have three much more dishes planned just for this season alone and I’m actually asking yourself if I should overload you with all these Reuben dishes.
I really like St. Patrick’s Day because it gives me a fantastic excuse to cook with corned beef each and every day for a month, and eat all the Reuben sandwiches I want. - 2 lbs golden potatoes

- Salt and fresh cracked black pepper
- ¼ to ⅓ lb corned beef
- ½ cup sauerkraut, squeezed
- ¼ cup thousand island dressing
- one¼ cup shredded Swiss cheese
- Preheat oven to 400 and line a rimmed cookie baking sheet with aluminum foil.
- Wash and dry potatoes. Dice potatoes into about ¼ inch cubes. In a mixing bowl, toss diced potatoes with salt, pepper, and oil, coating them fully.
- Spread potatoes in the prepared baking sheet, evenly, making an attempt not to overcrowd them.
- Bake potatoes right up until golden brown, it will take twenty-25 minutes, dependent on the thickness of potatoes.
- You can use the same baking sheet to make loaded potatoes or an additional oven-risk-free pan.
