The key to astounding Hen Parmesan is to have astounding chicken cutlets and astounding sauce. What you’re going to do is pound some chicken breasts flat and then bread them. When breaded, you pan-fry them to a crunchy golden brown and then end cooking them in the oven, just for a brief time.

Following the chicken is cooked, you best it with tomato sauce and shredded mozzarella cheese. It goes back again into the oven to soften the cheese and warmth the sauce. Sprinkle anything with a lot of shredded Parmesan cheese and dig in!

Basic Hen Parmesan

Generate: 4 servings

  • 1 and 1/4 cups plain breadcrumbs

  • 1 tsp. dried thyme

  • two Tbsp. grated Parmesan cheese plus ¼ cup

  • 1/two tsp. salt

  • 1/4 tsp. floor black pepper

  • 1/two cup all-function flour

  • two eggs

  • two - 6oz. skinless and boneless chicken breasts (or 4 chicken cutlets)

  • vegetable oil

  • 1 cup tomato sauce

  • 1 cup shredded mozzarella cheese


  1. Preheat oven to 400°F. Lower chicken breasts in half horizontally to build cutlets. Pound to 1/4 inch thickness.

  2. In smaller shallow bowl or pie plate, blend breadcrumbs, thyme, two tablespoons of the Parmesan, 1/two teaspoon of the salt and and the black pepper. In another shallow bowl crack eggs and defeat to blend. In another bowl include flour.

  3. Moisten chicken frivolously with drinking water. Dredge chicken in flour, then eggs, then the breadcrumb combination. Position chicken on plate and repeat with the rest of the chicken.

  4. In a large skillet include sufficient vegetable oil to deal with 1/eight inch. Heat skillet more than medium until shimmering. Increase two chicken cutlets and cook dinner until brown, about 1 and 1/two minutes for each aspect. Transfer to a wire rack lined baking sheet. Increase extra oil to the skillet and repeat cooking the other two breasts.

  5. Transfer chicken, wire rack and pan to oven. Bake until cooked by and business, eight-10 minutes.

  6. Transfer chicken to the pan, set wire rack apart. Major chicken with tomato sauce and mozzarella cheese. Bake until cheese is melted and sauce is warm, five minutes.

  7. Garnish with remaining 1/4 cup of Parmesan cheese. Provide.
