Red Lentil Dip

This Curried Tomato & Lentil Dal Dip is 1 of my favorite Indian dishes. The Indian spice combos of curry powder and garam masala will incorporate a great deal of flavour and introduce you to new elements that are employed in the Indian pantry.

I’ve been a vegetarian for twenty five in addition several years and the variety of elements in Indian food has usually fascinated me. In North America, we commonly have 1 or two forms of cinnamon offered, but in India, they can have as a lot of as 6! This recipe is a easy way to use Indian staples this kind of as crimson lentils, curry powder and garam masala that effects in an authentic taste straight out of South Asia.

What is dal?

In India, dal refers to soup dishes made from lentils, peas, or beans. In this case, I chose crimson lentils to serve as the base for my dal dip.

Lentils, a member of the legume relatives, are easy because they never require to be pre-soaked and they cook swiftly. They come in a lot of colors and varieties – environmentally friendly, black, and crimson, just to identify a couple of!

Purple lentils are peeled, break up, and orange-colored. Immediately after cooking, crimson lentils will become amazingly creamy, perfect for dal.

What is curry powder?

Curry powder is 1 of India’s most popular spice mixes. To make it, fresh, total spices like coriander, cumin, and fenugreek seeds are toasted and then ground to develop a aromatic mixture. A crushed cinnamon stick and ground turmeric incorporate a bit of sweetness and color.

When I make my possess curry powder, I usually wait until eventually the toasted seeds have cooled ahead of I grind them. You can grind spices by hand with a mortar and pestle, or employing a spice grinder.

Great or coarse, it’s up to you. I retail outlet my curry powder in an airtight container in a interesting, dim location for up to four months.

What is garam masala?

Numerous people are common with curry powder, but not garam masala, which is a Northern Indian spice mix that includes some mixture of cardamom, cloves, black peppercorns, cumin, cinnamon, nutmeg and mace. You can make garam masala yourself, or use a ready-made spice mix.

Not like curry powder, which can be included at the starting or conclusion of a recipe, garam masala is employed as a remaining seasoning at the conclusion of a dish.

In conventional Indian cuisine, dal can be served with naan bread, roti, chapati, or rice. I advise serving this recipe with toasted pita chips.
