I have been a prolonged-time fan of beets, and I couldn't pass up these pretty bunches at the keep.  We juiced some, then roasted the rest.  Delicious!
three-four cloves garlic, minced
one/four cup olive oil
salt and pepper to taste
tablespoon lime juice or vinegar
beets, scrubbed and minimize
Scrub your beets with a veggie brush and cut off the greens.
Combine with each other all the other components in a bowl.
Coat lower beets with your mixture, roast on 400 degrees for about 45 minutes or right up until carried out.  Enjoy!
