Quinoa Applesauce Muffins
Serves: eight
  • 1&frac34 cups quinoa flour
  • &frac12 cup almond flour
  • &frac12 teaspoon baking soda
  • &frac12 teaspoon baking powder
  • &frac12 teaspoon salt
  • &frac12 teaspoon ground cinnamon
  • &frac12 cup butter or coconut oil
  • &frac12 cup brown sugar
  • one big egg
  • one cup applesauce
  • one cup banana, mashed (two bananas)
  1. Preheat oven to 400 degrees F.
  2. Blend the baking soda, baking powder, salt, and cinnamon with the quinoa flour and almond flour.
  3. Individually mix together butter or coconut oil, sugar, egg. applesauce, and mashed bananas.
  4. Combine all elements.
  5. Spoon into an oiled muffin tin and bake for 15 to 20 minutes, or until finally slightly spongy to the touch.
