The veggies themselves are quite simple. Just sliced thinly (as you can see in the video, I really utilized my spiralizer!), then sauteed with a blend of chili powder, cumin, smoked paprika and salt. Just cook until finally they’re tender and soft, which will take about 10 minutes total, and you’re good to go!

Black Bean Quinoa Fajita Bowls

  • one cup quinoa
  • 2 cups water
  • 1 lime, juiced
  • one/2 cup cilantro
  • 2 bell peppers
  • one jalapeno pepper (optional)
  • 1 tiny red onion
  • two teaspoons chili powder
  • two teaspoons cumin
  • one/2 teaspoon smoked paprika
  • one/2 teaspoon salt
  • 1 (15 oz can) black beans, drained and rinsed

Directions

Include quinoa and water to a tiny saucepan. Carry water to boil, lessen to simmer and cover on minimal heat for 15 minutes.

While the quinoa is cooking, thinly sliced the bell peppers (or use a spiralizer). Repeat with red onion and then finely chop the jalapeno.

Heat a non-stick skillet over medium heat. Include greens (along with a splash of water or oil, if wanted) and cook until vegetables have started out to soften. Stir in spices.
