Black Bean Quinoa Fajita Bowls
Elements
- one cup quinoa
- 2 cups water
- 1 lime, juiced
- one/2 cup cilantro
- 2 bell peppers
- one jalapeno pepper (optional)
- 1 tiny red onion
- two teaspoons chili powder
- two teaspoons cumin
- one/2 teaspoon smoked paprika
- one/2 teaspoon salt
- 1 (15 oz can) black beans, drained and rinsed
Directions
Include quinoa and water to a tiny saucepan. Carry water to boil, lessen to simmer and cover on minimal heat for 15 minutes.
While the quinoa is cooking, thinly sliced the bell peppers (or use a spiralizer). Repeat with red onion and then finely chop the jalapeno.
