So I was sitting right here on Halloween, seeing adverts for the haunted tunnel excursions, and pondering about noodles…..Udon Noodles to be exact…. and so I googled Shanghai Noodles. Imagine my shock when I located out they were a actual factor….and boy did they sound great!

Shanghai Noodles
You’ll need some Udon Noodles, Shiitake Mushrooms, Napa Cabbage, Child Bok Choy, Garlic, Ginger, Green Onions, and a Carrot for this recipe. For the sauce I mixed Soy Sauce, Hoisin Sauce, Mirin, a small Chili Garlic Paste, Brown Sugar, and a few drops of Sesame Oil.
A quite easy Stir Fry….. you got this!
The Udon Noodles I purchased were precooked and compacted in a minor 7oz bundle with a seasoning packet (throw that away). I simple added 3 of people packages of noodles to some hot water and allow them slowly unwind from every other. Stir them close to with a wooden spoon if it helps. Then drain and set aside.
Make the sauce by whisking all the sauce substances over lower heat, and when it commences to simmer, add a slurry of one Tbs cornstarch and one Tbs water. to thicken. Remove from heat when thickened and set aside.
Stir Fry the ginger and garlic in a little water until softened, then add one shredded carrot, a tiny bundle of chopped Child Bok Choy, an eight oz package of Shiitake Mushrooms and about ¼ head of chopped Napa Cabbage.
When the veggies are good and soft stir in the sauce and the noodles. Mix properly to mix and serve with chopped Green Onions for garnish.

Serves: four servings
- 3 packages of Udon Noodles (seven¾ oz every single)
- ½ head Nappa Cabbage, chopped
- one modest bundle child Bok Choy, chopped
- three cloves Garlic, minced
- 1-two tsp fresh Ginger, minced
- 1 Carrot, shredded or sliced into thin sticks
- 8oz package deal Shiitake Mushrooms
- ½ cup Water
- ¼ cup Soy Sauce, lower sodium
- ¼ cup Hoisin Sauce
- two Tbs Mirin (sweet cooking wine)
- 1 tsp Chili Garlic Sauce
- ½ tsp Brown Sugar
- ⅛ tsp Sesame Oil
- one Tbs every Cornstarch & Water
- Include packages of noodles to sizzling water, stir until they loosen and unwind
- We will NOT be using the flavoring packets - toss them.
- Drain noodles and set aside
- Whisk all elements (except cornstarch) collectively above low heat till simmering
- Make a slurry of the Cornstarch and one Tbs Water and stir it in to thicken
- Take away from heat
- Stir Fry the garlic and ginger in a minor water until finally softened and fragrant
- Add carrot, bok choy, cabbage, and mushrooms
- Stir fry right up until veggies have softened.
- Keep adding water as required to keep every thing from sticking.
- Stir in sauce and noodles and mix well
- Garnish with chopped Green Onions, Sesame Seeds, and Sriracha
