Low-Carb Almond Crescent Cookies – dairy-free option

This low-carb Almond Crescent Cookie Recipe is my recreation of one of my childhood favorites--now grain-free with a dairy-free option.

These days I have the sincere pleasure of sharing with you one particular of my preferred recipes of all time — Minimal-Carb Almond Crescent Cookies. This is a recipe that I have been working on for a long time, and it's last but not least perfected.

Yes, sharing excellent recipes is something that brings me a lot of joy.  Isn't it fun to share some thing that you enjoy no matter whether it be a recipe, a movie, a place to go, a website, or a great guide?  Sharing makes almost everything much better.

Anyhow, there is just anything special about baking cookies with your family members.

When I was tiny, I loved baking cookies.  Any kind of cookie.

So Christmastime was particularly exciting for me.  I would bake all types of cookies–some for my household and some for gifting.

I would usually have Chocolate Chip Cookies in the combine, and usually there had been Meltaways and Candy Cane Shortbread Cookies, and Biscotti (when I acquired old and was into far more “complicated” cookies).  My favorites were constantly the Peanut Butter Blossoms and the Almond Crescent Cookies.

Just. so. very good.

And there is one thing about the form — tiny crescent moons adorned with either powdered sugar or almond slices.

They make me content.

Perhaps that is because when you turn them so that they curve upwards, they appear like a smile :).

What ever the situation, I love these cookies.

The almond flavor of these cookies is complimented flawlessly by the light texture and the buttery taste tends to make it all just heavenly. Mmmmmmm…..

Why minimal carb?

Anyhow, I was this kind of a sugar addict when I was younger, but that had to change. Due to candida and other problems in our family members like autism, thyroid condition, and adrenal fatigue, we had to change factors up with out diet regime several times.

We have experimented with a lot of diet programs, but going sugar-free and moving more in the reduced-carb route has been a excellent assist for us in many techniques.

I am not an advocate for eating lower carb all the time. In reality, including some carbs into my diet plan is one particular issue that I feel was critical in the healing of my thyroid condition. However, most of us consume way as well a lot of carbs and it is wreaking all varieties of havoc on our bodies and on our society.

Back to the cookies.

I tried making these Almond Crescents several occasions, and even though it was exciting experimenting, it was hard to get the sweetness just right although not getting the cookies expand like crazy when baking.

You can see my “Low-Carb Almond Crescent Cookie” fail right here:

ALMOND CRESCENT ? FAIL!! Working on recreating a single of my favorite childhood cookies, but alas, I ended up generating an Almond Flour Crust alternatively! ? ??????? Back to the drawing board! #paleo #vegan #lowcarb #cookies #healthy #keto #dairyfree #glutenfree #fail #grainfree #cookie

Ugh. That edition might work flattened out as a cookie base for a tart or anything, but cookies they for positive weren't.  Sigh.

So I had to go back to the drawing board. Numerous occasions.

I tried a bunch of different versions, but incorporating a bit of coconut flour to the dough appeared to do the trick.

The crescent cookies turned out best–perfect in taste and not flat as a pancake.

As mentioned in the recipe, you can roll them in almond slices, or sprinkle them with powdered sweetener, or do each. I believe dipping these in melted chocolate or my melted Homemade Chocolate Chips or Homemade White Chocolate Chips (mmmmmmmm…white chocolate and almonds–yum!) would be a great alternative too.

These cookies are best for dunking into coffee or Sizzling Chocolate (like this Dairy-Free Hot Chocolate) or milk, or of course dairy-free milk (like this Best Coconut Milk or Easiest Almond Milk if you consume dairy free like we do). And of program you can also simply eat them on their personal.

Believe me, you will have a difficult time not consuming each and every single a single of these.

Ours had been gone in a flash–even the ugly flat ones :).

Please pay out attention to the critical note on the baking time: The cookies will seem really soft when you take away them from the oven, but they will awesome to be just the proper texture.

I know. It truly is tough.  You want to consume all of the cookies.  Now.  We did that.  Ate a entire bunch and they had been also soft.

I truly imagined that I had botched one more recipe.  But following they had cooled we recognized that we missed out on the fantastic ideal texture of these cookies due to the fact we just couldn't wait!  So wait.  Let them awesome. You can do it!

I know, I said that prior to, but you truly want to keep in mind this to avoid full blown soft cookie disappointment.
